They're realistic mid-range starting figures, not a quote for your project. Costs vary a lot by region, finish level, and site conditions, so every number is a placeholder to replace with yours — the template saves you the blank page and the list of line items.
On margin. Each template figures your bid as total cost ÷ (1 − margin), plus a contingency, so the margin you set is the margin you keep. A markup would quietly leave money behind.
